Simple and gourmet! Juicy asparagus roasted with fresh wild garlic and sprinkled with crunchy sesame seeds. A light, aromatic side dish or vegetarian dish with a strong character.

Ingredients:

  • 500 g Elingea white asparagus, cleaned
  • 1 handful wild garlic (or 2 cloves garlic, chopped)
  • 1–2 tbsp olive oil
  • tbsp sesame oil (optional, for extra flavor)
  • 2 tbsp sesame seeds (white or black, or both)
  • Salt & freshly ground pepper
  • A little lemon juice (optional)

Instructions:

  1. Preheat oven:

    • At 200°C, fan-forced or up and down.
  2. Preparing asparagus:

    • Place the asparagus on a baking sheet lined with parchment paper.
    • Add the olive oil, sesame oil (if using), chopped wild garlic, salt and pepper.
    • Stir to coat well.
  3. Baking:

    • Bake for 12–15 minutes until soft but still firm.
    • 5 minutes before the end, sprinkle with sesame seeds to lightly toast in the oven.
  4. Serving:

    • Serve hot, with a few drops of lemon juice if desired.
    • Accompany with rice, grilled tofu or as a meze with bread and wine.
