Baked asparagus with bacon and eggs
Crispy asparagus wrapped in smoked bacon, baked in the oven, served with fried or poached eggs. A complete and tasty dish for any time of the day.

Ingredients:
- 10–12 Elingea white asparagus
- 6 slices bacon (thinly sliced)
- 2 eggs
- 1 tbsp olive oil
- Freshly ground pepper
- A little lemon zest or parmesan (optional)
Instructions:
1. Preparing the asparagus:
- Wash the asparagus and clean them (especially if they are white).
- If they are thick, boil them for 5 minutes in salted water to soften them a little.
- Drain and let them cool slightly.
2. Wrapping and baking:
- Wrap every 2–3 asparagus with a slice of bacon.
- Place them on a baking sheet lined with parchment paper, drizzle with a little olive oil and pepper.
- Bake in a preheated oven at 200°C for 15 minutes, until the bacon is golden brown.
3. Prepare the eggs:
- Cook the eggs in a non-stick pan or poach them (3 minutes in water with vinegar).
4. Serving:
- Place the asparagus on the plate, add the egg on top.
- Sprinkle with a little lemon zest or grated parmesan for extra flavor.
