Crispy asparagus wrapped in smoked bacon, baked in the oven, served with fried or poached eggs. A complete and tasty dish for any time of the day.

Ingredients:

  • 10–12 Elingea white asparagus
  • 6 slices bacon (thinly sliced)
  • 2 eggs
  • 1 tbsp olive oil
  • Freshly ground pepper
  • A little lemon zest or parmesan (optional)

Instructions:

1. Preparing the asparagus:

  • Wash the asparagus and clean them (especially if they are white).
  • If they are thick, boil them for 5 minutes in salted water to soften them a little.
  • Drain and let them cool slightly.

2. Wrapping and baking:

  • Wrap every 2–3 asparagus with a slice of bacon.
  • Place them on a baking sheet lined with parchment paper, drizzle with a little olive oil and pepper.
  • Bake in a preheated oven at 200°C for 15 minutes, until the bacon is golden brown.

3. Prepare the eggs:

  • Cook the eggs in a non-stick pan or poach them (3 minutes in water with vinegar).

4. Serving:

  • Place the asparagus on the plate, add the egg on top.
  • Sprinkle with a little lemon zest or grated parmesan for extra flavor.
